The Vegan Basics Presto Pesto
Presto Pesto is just as easy as Sweet Roast Garlic... and can be used in the same ways. It is a staple on my favorites shelf in the refrigerator and adds a taste dimension that makes me look like a gourmet chef.
Pre-Preparation
Purchase fresh basil... should be green, no moisture and no dark areas on the leaves or stems. I buy mine at Trader Joe's... it's organic and comes in a 4 ounce plastic carton.
Ingredients
1/2 cup raw pine nuts
4 ounces basil
1 teaspoon sea salt
1 cup extra virgin olive oil
pinch crushed red pepper flakes
4 cloves of garlic

food processor or blender
small sauté pan
spatula

Preparation Raw Pine Nuts
In a small sauté pan, lightly toast the raw pine nuts until they are a golden brown... I constantly toss them in the pan until they are golden. The nuts will burn easily, so don't go and do something else. As soon as the nuts are golden, remove them from the pan to stop the cooking process... if you leave them in the pan, they could burn while you are preparing the basil.
Creating the Pesto
-Place the fresh basil into the food processor... I use the entire package with the stems included. The basil that I get from Trader Joe's has stems that are tender. If you get another type of basil, the stems may be woody and you would not want to use them.
Using the knife blade, pulse the leaves and stems until smooth.
Add the pine nuts, garlic, salt and red pepper flakes... pulse again to distribute.
With the food processor running, drizzle slowly the extra virgin olive oil.
Once the oil has been added, STOP THE MACHINE... the mixture will be thick like mayonnaise.
Don't over process or the mixture will separate and become like salad dressing!
Storing the Pesto
Pour the mixture into your favorite jars, seal them and refrigerate... should last for a month.
Serving Ideas
Presto Pesto can be used:
- like garlic spread on breads and then broiled
- like butter on vegetables as a finishing touch in sauces for an extra complexity
- in salad dressings
Hint: If you counting calories, use less... you could also use 1/2 cup of olive oil instead of one cup in the creating process... Experiment with fewer pine nuts and more garlic to also cut calories.
