Thai Sticky Rice
Fresh Mint, Thai Sticky Rice, Green Papaya Salad, Spring Rolls, and Sesame Tamari Dipping Sauce.
The sweet fragrant taste of Thai Sticky Rice is just like dessert! This rice cooks FAST! I start it when I start assembling the spring rolls and it is done in 20 minutes, but is best left heating in the rice cooker for another 10 minutes.
Ingredients
3 cups Thai Sticky Rice
3 1/2 cups cold water
Yields: 6 cups
Tools
rice cooker
plastic or wooden rice scoop
measuring cup
Preparation
Fill the electric rice cooker with the rice, water and pinch of sea salt.
Close the lid and turn the rice cooker on.

Thai Sticky Rice cooks faster that any other rice... once the machine goes into the warming mode, use a rice paddle and fluff the rice gently and close the lid.
Let the rice rest for another 10 minutes before serving.
Presentation
Presentation of Thai Sticky Rice can be enhanced by creating a form.

I spray a small 1-cup custard bowl with a non-stick oil spray and press the cooked rice into the bowl with my rice paddle.
Invert the bowl onto the plate and then add the Spring Rolls, Green Papaya Salad, cucumber slices, red lettuce leaves, Sesame Tamari Dipping Sauce and mint sprigs.
Serving Size: One cup rice per person.
