Vegan Breakfasts

English Muffin, Vegan Cream Cheese and Mock Egg Salad

English Muffin

Sometimes readers ask what we eat for breakfast. So this is an example of a fast and furious morning's vegan breakfast for the Morgan Household. RobART can make it just as fast as me and whoever gets up first is in charge of their own breakfast. By having the Mock Egg Salad prepared ahead of time, it is easy to scoop it out and EAT immediately. And the Follow Your Heart Cream Cheese tastes just like the REAL THING!

Ingredients

1 package whole wheat English Muffins, Trader Joe's is good
1 container Follow Your Heart Cream Cheese
1 recipe Mock Egg Salad
beverage of choice
vitamins

Tools

small plate

toaster

spreading knife

cup or glass for beverage


Preparation

Toast the Muffins

Toast the English muffin to the desired color.

Spreads

Spread one English muffin with Follow Your Heart Cream Cheese and the other with my Mock Egg Salad recipe.


EAT

If in a hurry, eat while standing. Should you have time, sit and enjoy in your favorite place with a hot cup of espresso or tea.
