Vegan Breakfast
Soyrizo Breakfast Taco


Spicy, snappy and a sunny taste makes the Soyrizo Breakfast Taco a great breakfast or brunch feast for the most important meal of the day. If you've missed the delicious flavor of Chorizo, you'll love Soyrizo!

Ingredients
1/2 package extra firm fresh organic tofu
12 organic corn tortillas
1 bunch of fresh organic cilantro
1 whole tomato, diced
1/2 red onion, peeled & diced
1 jalapeño, seeded & diced
1 russet potato, peeled & diced
No-Stick Pan Spray
1/2 package Soyrizo Meatless Soy Chorizo, one sausage

Soyrizo Meatless Soy Chorizo

A healthy alternative to the tasty Mexican Sausage called Chorizo is a product call Soyrizo made with 100% soy beans. Soyrizo contains no cholesterol, no sodium nitrite, has 46% fewer calories and 57% fewer calories from fat that traditional Chorizo Expeller-pressed canola oil is added for taste and texture. Spices and seasonings used in the traditional meat-based Chorizo makes Soyrizo tastes just like Chorizo!

Preparation
Potato
Peel and dice the potato.

Cook diced potato till fork tender over medium high heat.

Remove cooked potato from skillet and set aside.

        

Soyrizo & Tofu
Spray the cast iron skillet with no-stick oil spray and crumble the Soyrizo sausage into the pan and cook over medium high heat.


Soyrizo and Crumbled Fresh Firm Tofu

Crumble 1/2 of the fresh organic tofu into the Soyrizo and continue cooking until the moisture content is eliminated... the meatless mixture should resemble ground cooked sausage.

Add the cooked diced potatoes and stir till combined.

Dice the Fresh Ingredients
Dice the tomato and red onion.

Give a rough chop to the fresh cilantro.

Half, seed and dice the fresh jalapeño pepper.

Put all the fresh ingredients into a bowl and toss together.

Tortillas
Pre-heat a small cast iron skillet over medium-high heat and then turn off the heat and cover with a lid.

Over gas burner flame, begin heating each tortilla till pliable.

Put the heated tortilla into the preheated skillet and cover with lid.

Continue heating each tortilla over the open gas flame until all are heated and in the covered skillet.

Assemble the Soyrizo Breakfast Taco
Spoon about 1/4 cup of the Soyrizo mixture into each tortilla and include a spoonful of the fresh ingredients.

Presentation
Soyrizo Breakfast Tacos are a great Sunday brunch menu item. They can be festive without the fuss. Great for drop-in guests or a quick luncheon.
