Vegan Vanilla Frosting
Top your favorite cupcakes or cake with this fresh tasting vanilla bean speckled frosting.
Ingredients
6 tablespoons Silk Vanilla Creamer
2 tablespoons Trader Joe's Vanilla Bean Paste
BUY Nielsen-Massey Madagascar Bourbon Pure Vanilla Bean Paste
At Thanksgiving and Christmas times, Trader Joe's carries Vanilla Bean Paste with their Trader Joe's Label and I think it is the same company version as Nielsen-Massey.
1 - 16 ounce package organic powdered sugar, sifted
1/4 cup Earth Balance Organic Whipped Buttery Vegan Spread

Preparation
Cream the Butter
With the paddle tool inserted in the Cuisinart Stand Mixer, cream the butter till smooth.
Sift and Add the Sugar
Sift the organic powdered sugar to remove any lumps before adding to the mixing bowl.
Add the sifted organic powdered sugar to the Cuisinart Stand Mixer bowl and continue to cream the butter and sugar together.
Turn the Cuisinart Stand Mixer off, tilt the head back and scrape the sides of the bowl with a long handled spatula making sure that all the butter has incorporated into the powdered sugar.
Add the Soy Milk
With the paddle blade repositioned inside the mixer bowl, turn the Cuisinart to level 3 and begin adding one tablespoon of soy milk at a time until all 6 tablespoons have been added.
Raise the level of the Cuisinart to level 5 and mix until the frosting is smooth and creamy.
Stop the Cuisinart Stand Mixer, tilt the head back and scrape the sides of the mixing bowl again to make sure that all the ingredients have been blended together.
Reposition the paddle back inside the mixer bowl and run at level 5 for another 30 seconds.
Stop the machine, remove the paddle attachment and rinse.

Frost the Cake or Cupcakes
Remove the mixer bowl from the stand.
Using an offset spatula, begin frosting the cake or cupcakes.
Leftover Frosting
This recipe will frost two batches of Vegan Vanilla Cupcakes or one 9 inch layer cut in half. For frosting a two layered cake, you will want to double the recipe.
If you have leftovers of the frosting, place in a plastic container and refrigerate. This frosting will last a week or more and tastes great on graham crackers of Biscoff cookies.
