Match Meat Vegan Meatloaf

Match Meats Vegan Meatloaf tastes-like and looks-like and smells-like real beef. The taste from this recipe is just like mama's!

Ingredients

1 pound package Vegan Beef MATCH Meat
3 cloves garlic, minced
3/4cup onion, finely chopped
1/4 cup bell pepper, finely chopped
1 tablespoon Presto Pesto
1/4 teaspoon sage
1/4 teaspoon thyme
1 teaspoon black pepper
1/4 teaspoon crushed red pepper flakes
1 tablespoon Italian parsley, finely chopped
1 cup organic bread crumbs, Trader Joe’s

Topping Glaze

1/2 cup organic ketchup

The Side Dishes

6 Yukon Gold potatoes
8 carrots, peeled and grated

Tools

Preheat Oven to 375°

Preparation

Basic Vegan Mashed Potatoes

Follow the Basic Vegan Mashed Potatoes recipe and start them before creating the Match Meat Meatloaf.

The Match Meat Vegan Beef Meatloaf

Measure all the ingredients except the Topping Glaze into a large mixing bowl.
With wet hands, mix all other ingredients thoroughly.

Wet your hands again and form a loaf shape out of the mixture.

Place the loaf onto a piece of parchment paper. I put a sheet of aluminum foil under the parchment paper and folded the sides to make a pan for easy clean-up.

The Topping Glaze

Apply the ketsup over the top of the loaf and bake in the preheated 375° oven for 25-35 minutes. (I live at 5,000 feet above sea level and cooked the Match Meat Meatloaf for 35 minutes.)


I recommend using a thermometer and check the core temperature after 25 minutes. Ideally, cook the meatloaf till the thermometer reads an internal temperature of 160 degrees.

The Gravy

Choose the Simple Vegan Gravy or the Northwest Mushroom Gravy recipe and begin preparing while the potatoes and meatloaf are baking.

Presentation

Use a serrated knife and see-saw through the baked meatloaf to create individual serving slices.

Serve with your favorite potato, mushroom gravy and fresh vegetables.


The Basic Northwest Mushroom Gravy is a perfect compliment to the meatloaf and Yukon Gold Mashed Potatoes. I shredded some fresh peeled organic carrots with the Borner Julienne Slicer and sauteed them with a tablespoon of extra virgin olive oil. Can’t wait till lunch tomorrow to make a Match Meat Meatloaf Sandwich... just like Mama made for my sack lunches in elementary school! Of course, sans the white bread and greasy fried chips.
