Ingredients for The Vegan Match Meat Chicken Cutlets
1 package Match Meat Chicken (1 pound), divided into 4 or 6 equal balls
2 cups organic bread crumbs
1 tablespoon dried lemon thyme
4 tablespoons olive oil for frying
1/4 teaspoon sea salt
1/4 teaspoon black pepper, freshly ground
Ingredients for The Vegan Picatta Sauce
4 tablespoons Bob's Red Mill Organic White Flour
4 tablespoons extra virgin olive oil
1/2 cup dry white wine
1/2 cup organic sweet onion, finely chopped
1 tablespoon garlic, minced
1 cup Imagine No Chicken Stock
1 tablespoon fresh thyme
2 tablespoons lemon juice, freshly squeezed
2 tablespoons lemon zest
4 tablespoons capers (Trader Joe's)
1/4 teaspoon sea salt
1/4 teaspoon black pepper, freshly ground
1/4 cup Italian flat-leaf parsley, finely chopped
Preparation
The Picatta Sauce
The Roux
In a small sauté pan, heat the olive oil over medium heat and then add the flour.
Whisk the flour into the olive oil creating the roux.
Cook the roux till bubbly and slightly browned.
Season the Roux
Add the finely diced onion and minced garlic.
Cook for about two minutes until the onion is translucent.
Add the Imagine No Chicken Broth, fresh thyme, and lemon juice and bring the contents to a boil.
Turn the heat off and add capers, lemon zest and finely chopped Italian parsley.
Season with Salt and Pepper.

The Vegan Picatta Sauce
Set the completed Picatta Sauce to the side and start creating the Vegan Match Meat Chicken Cutlets.
HINT: The Picatta Sauce could be made the day before to make this an instant dinner party. Cooked the pasta at the same time and all you'll have to do is heat the sauce and pasta while cooking the cutlets.
The Vegan Match Meat Chicken Cutlets
Coat your hands with olive oil to prevent the Match Meat from sticking to your skin.
Divide the Chicken Match Meat into four or six portions forming each into thin cutlet shapes. I think six portions is best, but for these photos I divided the portions into four... I felt it was to large a portion. The Match Meat Chicken tends to plump as it is cooked, so make the cutlets thinner than you think they should be.

The Bread Crumb Coating
Combine two cups of organic bread crumbs with 1 tablespoon dried lemon thyme, 1/4 teaspoon sea salt and 1/2 teaspoon freshly ground black pepper.
Whisk the bread crumb mixture to evenly distribute the thyme, sea salt and black pepper.

Trader Joe's Organic Plain Bread Crumbs Seasoned with Dried Lemon Thyme
Dip each Chicken Match Meat Cutlet into bread crumbs and sauté in olive oil over medium heat till browned and crispy on each side, approximately 3 minutes per side.

Elegant Match Meat Vegan Chicken Picatta

Pour a small amount of the Picatta Sauce onto a large plate and add the Vegan Match Meat Chicken Cutlet. Complete the plating with a small mound of cooked pasta and add a bit more sauce over the pasta and over a portion of the cutlet.
Add your favorite vegetable and salad and you've got an elegant dinner presentation.
If you have leftover Picatta Sauce, put it in a gravy dish for guests to add if they desire more sauce during the meal.
