Magnificent Madeira Reduction Sauce
Field Roast Celebration Wellington
An elegant gourmet sauce is a welcomed accompaniment to any festive meal. And Magnificent Madeira Reduction Sauce is so simple that anyone can create it. Ladled onto the surface of my plate with my Field Roast Celebration Wellington perched on top and drizzled over Yukon gold mashed potatoes… ooohlala!

Serve this for one of your holiday gatherings or for an intimate vegan dinner for two!

Kikkoman Tamari Soy SauceIngredients
1 garlic clove, rough chop
2 tablespoons olive oil
1 large shallot, minced
1 cup Miles Rainwater Medium Dry Madeira Wine
1 cup Imagine No Chicken Broth
1 cup Imagine Vegetable Broth
1 tablespoon Tamari
8 twigs of fresh thyme or 2 teaspoons dried
1 teaspoon freshly ground black pepper

Slurry Ingredients
1 1/2 tablespoons cornstarch
3 tablespoons cold water

Tools
2 sauce pots, medium, 2.5 quart
medium sieve
cutting board
measuring cups and spoons
large and small whisks

Preparation
Reduce
Over medium heat, place the extra virgin olive oil and shallots and saute till translucent.

Add the garlic, Madeira wine, broths, tamari, thyme, and pepper and simmer till reduced by one-third or one-half.

Strain
After reduction, remove from the sauce pan from the heat and strain the sauce through a fine mesh strainer.

Discard the solids collected.

Return to the strained sauce to the sauce pan and place over medium heat.

Thicken
In a small bowl, combine the cornstarch and water and mix until blended.

Stir cornstarch slurry into the sauce, stirring constantly until the contents comes to a low boil, thickens, and becomes translucent in color rather than creamy cornstarch white.

Taste and adjust the seasonings… the broths by Imagine have sea salt in them and the Tamari is salty, so I don't add any extra sea salt.

Serve immediately.

Yield: approximately 4 servings, 1/2 cup each
