Vegan Sandwich
Avocado Sprout Sandwich
Sprouts are packed with a wealth of nutrients, greater that any other vegetable that we can eat. So I try to add them to whatever I'm eating. This is a simple sandwich and packs well for lunches.
Ingredients
ripe avocado
Alvarado Street Bakery Bread, Rye
Vegenaise
sea salt
black pepper
crushed red pepper flakes
sprouts, fresh

Ingredients:
Sprouted Organic Whole Wheat Berries, Filtered Water, Molasses, Wheat Gluten, Sprouted Organic Rye Seeds, Organic Sunflower Seeds, Fresh Yeast, Sea Salt, Organic Sesame Seeds, Poppy Seeds, Soy Based Lecithin, Whole Caraway Seeds, Whole Dill Weed, Whole Celery Seeds, Cultured Wheat.

Preparation
Avocado
Slice the avocado in half and peel the outside off the flesh.
Lay the avocado half down on the flat side and slice it thinly lengthwise.
Set aside.
The Bread
Use a spatula and spread a THIN layer of Vegenaise over the entire slice... to two slices per sandwich.
Seasonings
Grate sea salt and black pepper over both Vegenaise covered bread slices.
Sprinkle crushed red pepper flakes over one side... this is HOT so add with care.
Sprouts & Avocado Slices
Add a thin layer of avocado slices and a thick layer of fresh sprouts.
Cover with the other Vegenaise covered bread slice and cut the sandwich in half.
Optional Additions
Sliced sweet onion and fresh tomato slices.
Presentation
Serve the Avocado Sprout Sandwich immediately with a few chips and some Bread & Butter Pickles. If traveling, wrap the sandwich tightly in plastic wrap and refrigerate.
