Easy Green Sprout Roll-Ups

The first week I used my Easy Green MicroFarm Sprouter, I filled ALL the trays with seeds and had a full harvest 5 days later! With so many sprouts, I had to think of ways to eat them FAST! We had a house full of children and grand-children, so I made a mid-morning snack tray of these Easy Green Sprout Roll-Ups. Needless to say, they were GONE in a matter of minutes with lots of oohs and aahs from the eaters.

Preparation

The Meatless Luncheon Meat
Select your favorite meatless luncheon meat and lay out all the slices on a clean kitchen counter. In this photographed recipe, I used Yves Veggie Bologna. I keep Yves and Tofurky Slices in my freezer

Yves Meatless Deli Bologna Slices
Ingredients:
Water, isolated soy protein, vital wheat gluten, expeller pressed canola oil, evaporated cane juice, natural flavors (contains yeast extract), sea salt, autolyzed yeast, onion and garlic powder, vitamins & minerals (dipotassium phosphate, dimagnesium phosphate, zinc oxide, ferric orthophosphate, calcium panthothenate, thiamin hydrochloride, cyanocobalamin, iron oxide), carrageenan, wheat starch, beet powder (for color), citric acid, spice. CONTAINS: SOY and WHEAT. Manufactured in a facility that uses egg ingredients.

Tofurky Hickory Smoked Deli Slices
Ingredients: water, wheat protein, organic tofu (water, organic soybeans, magnesium chloride, calcium chloride), non-genetically engineered canola oil, natural vegetarian flavors, shoyu soy sauce (water, non-genetically engineered soybeans, wheat, salt, culture), non-genetically engineered corn starch, white bean flour, garbanzo bean flour, lemon juice from concentrate, garlic, onion, calcium lactate from beets.

Cheese-less Cheese
Select your favorite vegan cheese product and cut thin strips that will fit inside the diameter of the meatless luncheon meat.

Sprouts
With the green portion of the sprouts facing the outside diameter of the meatless luncheon meat, place two portions on each side.

Roll the bundle up and insert a toothpick to secure the bundle.

Presentation
Select a serving platter and line the rolls up creating a dramatic presentation. You could even put these in a lunch box for school or cooler for the beach.
