A Meltdown Vegan Meatloaf Sandwich from Meltdown Meatloaf Leftovers
Lunches from childhood often had meatloaf sandwiches created by my mother for my little brown lunch bag. So I decided to try a sandwich from the Meltdown Meatloaf recipe. The results were just as I suspected, GREAT!
Ingredients
leftover, refrigerated Meltdown Meatloaf
Vegenaise
bread of choice
fine sliced red onions for the adventurous
sea salt
black pepper
crushed red pepper flakes
fresh tomato slices
Tools
cutting board
plate for serving
serrated knife
Preparation
Slice the Leftover Meltdown Meatloaf
Use a serrated knife and see-saw gently through the loaf to help it remain intact.
Cut two slices for each sandwich you plan to prepare.

Cold Slices of Meltdown Meatloaf Leftovers
Tomato & Onion Slices
Slice the tomatoes on the thin side and set aside

For those who live on the "Wild-Side", slice a red onion on the fine side into a bowl of cold water.
This will prevent you from "crying" during the slicing process and will take the "burp"s out of the onion.
Drain the water off the onions after two minutes and scrape the thin rounds into a clean kitchen cloth to soak up any excess water.
Set the dried onions aside.
The Bread
Use the bread of your choice, Sprouted Barley by Alvarado Street Bakery is the selection I chose.
Apply a thin layer of Vegenaise on each slice, add the Meltdown Meatloaf slices, the tomatoes, and if you dare, the onions.
Season with sea salt, black pepper and a dash of crushed red pepper flakes.

Presentation
The Meltdown Meatloaf Sandwich not only tastes great, it's economical and comforting. Serve it with pickles and chips and turn on the football game or an old movie.
