Vegan Salads
Green Papaya Salad

Fresh Mint, Thai Sticky Rice, Green Papaya Salad, Spring Rolls, and Sesame Tamari Dipping Sauce.

Ingredients
1.5 pounds green shredded papaya
1 full head of garlic, pressed
2 jalapenos sliced into thin rounds
4 juicy limes or at least 1/4 cup fresh lime juice
3 tablespoons Tamari
2 tablespoons rice wine vinegar
2 firm tomatoes, cut into thin wedges

Tools
citrus squeezer
garlic press
measuring spoons
measuring cup
knife
cutting board
plastic gloves

Green Papaya
Purchase the shredded green papaya from your local Asian market. In San Diego I purchase the green papaya from Market 99 in the Clairemont area.

It is possible to use shredded carrots or julienned cucumber in place of the green papaya if you don't have a local source.

Preparation
Combine all the ingredients in a large bowl and toss to till all is combined.

Taste to check the acid from the limes and the salty from the Tamari.

Add more of either one till you are happy with the taste.

If you like it hotter, add more sliced jalapenos.

Cover the bowl with plastic wrap and refrigerate till serving... this salad is best eaten the same day as it is prepared. Leftovers can be eaten the next day, but it's not as good.

Presentation
I found some small stainless steel, 1/2 cup serving bowls at Ikea that are just the right size portion for the Green Papaya Salad... or you can use glass or ceramic.
