The Cuisinart Brick Oven comes with 2 baking racks, a baking pan, broiler tray, and a heavy baking stone. The baking stone fits into the bottom rack securely and the shelf is balanced evenly when pulling out to remove the baked items.
The back wall of the oven houses the convection fan.

Cleaning
All non-stone surfaces are covered with a nonstick material, which makes it a cinch to clean. The only complaint is that the pull out tray for the bottom cleaning is on the backside of the oven. This means the entire unit has to be moved to clean the bottom of the oven. To eliminate the shifting, I wait till the oven is totally cool and then hook up a brush or nozzle to my vacuum cleaner and suck out all the loose crumbs once a week.
What's Missing?
The Cuisinart Brick Oven has an analog dial for setting the temperature, but lacks an indicator for when it reaches the desired temperature. There is no digital reading, beeper or light that gives me a cue that the oven’s temperature has reached the dialed-in level. This is a flaw that I think will be resolved in the next generation. But for now, I use a infrared temperature gun that my husband uses in his computer lab for testing the interior temperatures of hard drives in his Mac lab. I simply open the door of the oven and point the gun at the interior and click the button. I instantly get a read out of the actual oven temperature.
Cooking Tips
After using the oven for a few times, I have figured out that it takes 25 minutes for it to reach 475 degrees F for cooking my vegan pizzas. But I still use the infrared temperature gun to make sure the temperature is correct.
This amazing appliance cooks my vegan pizzas just like California Pizza Kitchen... bubbly, crisp exterior crust with a soft interior bite. Roasted tomatoes, broiled nachos, and open-faced broiled cheese sandwiches are just a few items that I have cooked in the Cuisinart Brick Oven.
HINT: If you struggle getting your pizzas onto the oven stone without creating an avalanche of tangled dough and ingredients, try placing the pizza circle onto parchment paper cut the same size as the pizza stone. I use my Epicurean Cutting Board as a peel and slide the finished pizza right onto the HOT brick stone without any problems. Once the pizza is cooked, I slip the cutting board under an edge of the parchment paper and pull it onto the cutting board. So simple, clean and saves me clean up and aggravations.
