Mandolines and Slicers
Although I have great slicing knives in all sorts of shapes and sizes, it's my mandoline slicers that give me the uniform fast slices for onions, garlic and other vegetables. Just like knives, you'll want to have assorted mandoline models to meet the slicing needs for any vegetable you might want sliced.

Swissmar Borner V-Slicer Pro Mandoline

The Swissmar Borner V-Slicer Pro Mandoline is made of durable ABS plastic with German surgical grade stainless steel blades. Three very sharp inserts cube, julienne, slice and shred. One of the inserts is a thick/thin insert for 3 precision thicknesses plus a "zero" safety position to completely cover the V-blade when not in use. The ambidextrous Food Safety Holder has a serrated edge to safely push food off slicer, requires very little pressure that can produce a variety of different cuts. Steel pins grip most sizes and shapes of produce to create even slices every time and protects the user from cutting themselves.

Zucchini Match Sticks Created on the Swissmar Borner V-Slicer

An insert holder provides protective storage for extra inserts and acts as a drying receptical.

Cleaning: Simply rinse the parts in hot soapy water, rinse and place the inserts back into the holder. Sometimes I use a small soft nail brush to help remove vegetable pieces that get lodged in the blades.

The V-Blade: Always reinsert the "zero" safety insert before storing. This is protect the blades sharpness and prevent accidental cuts when reaching for it in a drawer or cabinet.

This is my mini-mandoline for slicing thin slices of garlic cloves. It's made by MIU France. It makes super fine slices of garlic cloves quick and easy.

Rosle Adjustable Slicer

My must-have kitchen tool is the Rosle Adjustable Slicer. The black wheels on the sides allow me to dial eleven adjustable thickness settings to create the perfect sliced vegetables.
